One-Pot Tuscan Orzo (Rice Cooker)

Ingredients

  • 2 tbsp butter
  • 1/2 medium onion, chopped
  • 4 cloves garlic, minced
  • 1/4 tsp Italian seasoning
  • 1/4 cup sun-dried tomatoes
  • 1 cup uncooked orzo pasta
  • 2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups packed fresh baby spinach
  • Fresh basil, for garnish
  • Salt and pepper, to taste

Directions

  1. Sauté: In rice cooker on Sauté-then-Simmer, heat oil and melt butter (oil mixture). Sauté onion and garlic until fragrant.
  2. Season: Stir in Italian seasoning and sun-dried tomatoes.
  3. Add Orzo: Add orzo, coat in oil mixture. Pour in broth and cream. Season with salt and pepper.
  4. Cook: Close lid, cook until done.
  5. Finish: Fold in spinach until wilted. Garnish with Parmesan. Enjoy!
