One-Pot Lemon Chicken Pasta

Ingredients

  • 3 boneless, skinless chicken thighs, diced
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 2 cups pasta (penne or your preferred pasta)
  • 3 cups water
  • 3 cups spinach
  • 1/2 cup grated Parmesan cheese

Directions

  1. Season chicken thighs with 1/2 tsp salt, 1/2 tsp pepper, and garlic powder. Set aside for 10 minutes.
  2. Add olive oil to Aroma rice cooker and use the Sauté-Then-Simmer (STS) function.
  3. Once the oil is heated, add the marinated chicken thighs and minced garlic. Sauté the chicken until it’s browned on all sides.
  4. Add pasta, water, and lemon zest to the rice cooker. Stir well.
  5. Close the lid and let the rice cooker run its cycle, stirring occasionally.
  6. Once the rice cooker switches to “Keep Warm” and the pasta is al dente, open the lid and stir in the spinach, lemon juice and grated Parmesan cheese.
  7. Serve the lemon chicken pasta hot and enjoy your delicious one-pot meal!
